Shahi Tukda is a wonderful Hyderabadi sweet served as a dessert. Compared to other sweets it is easy to make and takes very less time. So let’s learn how to make Shahi Tukda by following these steps.

 

Ingredients

 For rabri

  • 4 cups soy milk
  • 3 tbsp milk masala
  • 1tsp rose water
  • 2tsp sugar

For sugar syrup

  • 1/4 cup water
  • 1/2 cup sugar

For pan frying bread

  • 5 slices of Whole wheat bread
  • 3 tsp Vegan ghee For Garnishing
  • Few strands of saffron
  • 5-6 pistachios

METHOD

For making rabri

  • In a thick bottomed pan or sauce pan or a kadai take 4 cups of soy milk and bring its first boil.

  • Add milk Masala (I used Everest brand) . Simmer the milk for some more minutes.

  • Remove the clotted cream/malai which forms on top of the milk.

  • Stir and scrape off the burnt or browned milk from the bottom and the sides.

  • Keep on simmering, stirring and scraping.

  • Switch it off when the milk has thickened and reduced.

  • Add 2tsp of sugar and let the sugar dissolve in the rabri.

  • Add 1tsp rose water for the essence and mix it

 It will take around 30-45 mins for the soy milk to thicken and reduced on medium flame.

 For making pan-fried bread

  • Cut the whole wheat bread into triangles

  • Heat some vegan ghee in a frying pan 3

  • Place the bread on the pan and toast them on low flame

  • Brown both the sides of the bread until it reaches a golden brown colour

  • Drain the bread on paper towel

For sugar syrup-

  • Mix 1/2 cup of sugar with 1/4 cup of water in a pan on low flame

  • Cook till you get a thread like consistency and a sugar syrup.

 

 

 

Coat the toasted bread with the sugar syrup and pour the rabri on the coated bread slices. Garnish it with some sliced pistachios and enjoy your Vegan Shahi Tukda.
